Pickling the Shallots
In a small saucepan, combine the white vinegar, sliced shallots, and a pinch of salt. Bring to a simmer over medium heat, then remove from heat and let cool. Once cooled, transfer to a jar and refrigerate for at least 30 minutes.

Cooking the Bacon
In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon, leaving the rendered fat in the skillet. Crumble the bacon and set aside.

Sautéing the Brussel's Sprouts
Sauté the Brussel's sprouts over medium heat for about 10-15 minutes, until they are golden brown and tender. Stir occasionally to ensure even cooking.

Combining and Serving
Once the Brussel's sprouts are cooked, remove them from heat. Toss in the crumbled bacon and pickled shallots. Serve warm.
