Beignet Preparation

Prepare the Dough
In a large bowl, combine flour, sugar, yeast, and salt. In a separate bowl, mix warm milk, water, and melted butter. Add the liquid mixture to the dry ingredients. Beat in the egg until combined.

Knead the Dough
Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Roll and Cut
Once risen, punch down the dough and roll it out to about 1/4 inch thickness. Cut into squares or rectangles using a knife or pastry cutter.

Fry the Beignets
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). Fry the beignets in batches until golden brown, about 2-3 minutes on each side. Remove and drain on paper towels.

Serve
Serve the beignets warm with a side of Mexican sipping chocolate for dipping.
