Prepare the Vanilla Cream
In a medium saucepan, combine the heavy cream, milk, sugar, cornstarch, and a pinch of salt. Slice the vanilla bean in half, scrape the seeds into the mixture, and add the pod as well. Whisk together and heat over medium heat until it starts to thicken. Remove from heat and stir in the bourbon. Let it cool slightly.

Caramelize the Bananas
In a skillet over medium heat, add a tablespoon of sugar and the sliced bananas. Cook until the bananas are caramelized and golden brown, about 3-4 minutes. Remove from heat and let cool.

Assemble the Pudding
In a serving dish or individual cups, layer the vanilla wafers, followed by a layer of the vanilla cream, and then a layer of the caramelized bananas. Repeat the layers until all ingredients are used, ending with a layer of vanilla cream on top.

Chill and Serve
Cover the dish with plastic wrap and refrigerate for at least 2 hours to allow the layers to set. Serve chilled, optionally topped with more caramelized bananas or crushed vanilla wafers.
