Gelato Preparation

    Prepare the Vanilla Bean

    Split the vanilla bean lengthwise and scrape out the seeds. Combine the seeds with the milk and heavy cream in a saucepan.

    Heat the Mixture

    In a saucepan, heat the milk, cream, and vanilla bean over medium heat until it just starts to steam. Do not let it boil.

    Whisk Egg Yolks and Sugar

    In a mixing bowl, whisk together the egg yolks, sugar, and a pinch of salt until the mixture is pale and slightly thickened.

    Temper the Egg Mixture

    Slowly pour some of the hot milk mixture into the egg yolk mixture, whisking constantly to prevent the eggs from cooking.

    Combine and Cook

    Pour the tempered egg mixture back into the saucepan with the remaining milk and cream. Cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon.
