Tzukuni Ingredients

Method

Tzukuni Preparation

  1. 1

    Prepare the Zucchini

Wash the zucchini under running water. Cut off the ends and slice them into thin rounds or half-moons, about 1/4 inch thick. You should have approximately 2 cups of sliced zucchini.

  2. 2

    Sauté Garlic

In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for about 1 minute, or until fragrant. Be careful not to burn the garlic.

  3. 3

    Cook Zucchini

Add the sliced zucchini to the skillet with the sautéed garlic. Season with salt and black pepper. Sauté the zucchini for about 5-7 minutes, stirring occasionally until they are tender but still slightly crisp.

  4. 4

    Add Lemon and Parsley

Once the zucchini is cooked, remove the skillet from heat. Stir in the lemon juice and chopped fresh parsley, mixing well to combine.

  5. 5

    Finish with Feta

Finally, sprinkle the crumbled feta cheese over the zucchini mixture. Toss gently to combine and allow the heat from the zucchini to slightly melt the cheese.

  6. 6

    Serve

Transfer the Tzukuni to a serving dish and enjoy warm as a side dish or a light main course.
