Macadamia Ricotta

Soak the Macadamia Nuts

Place the macadamia nuts in a bowl and cover them with water. Let them soak for at least 4 hours or overnight for best results.

Blend the Ricotta

Drain and rinse the soaked macadamia nuts. In a food processor, combine the nuts, 0.5 cup of fresh water, lemon juice, olive oil, and salt. Blend until smooth and creamy, scraping down the sides as necessary.

Adjust Consistency

If the mixture is too thick, add a little more water, one tablespoon at a time, until you reach your desired ricotta consistency.

Crispy Blue Oyster Mushrooms

Prepare the Mushrooms

Clean the blue oyster mushrooms gently with a damp cloth to remove any dirt. Tear them into bite-sized pieces.

Sauté the Mushrooms

In a skillet, heat the olive oil over medium-high heat. Add the torn mushroom pieces, sprinkle with salt and black pepper, and sauté for about 5-7 minutes until they are golden brown and crispy.

Remove from Heat

Once crispy, remove the mushrooms from the heat and set aside to cool slightly.

Truffle Oil Drizzle

Just before serving, drizzle the truffle oil over the macadamia ricotta for added flavor.
