    Prepare the Sweet Potatoes

    Preheat your oven to 400°F (200°C). Pierce the sweet potatoes with a fork and roast them in the oven for about 45 minutes, or until fork-tender. Let them cool and then peel off the skins.

    Make the Gnocchi Dough

    In a large bowl, mash the roasted sweet potatoes until smooth. Add the egg, salt, and gradually incorporate the flour until a dough forms. It should be soft but not sticky. You may need to adjust the flour based on the moisture of your sweet potatoes.

    Shape the Gnocchi

    Divide the dough into four pieces. Roll each piece into a long rope about 1-inch thick. Cut the ropes into 1-inch pieces. Use a fork to make indentations on each piece for a classic gnocchi shape.

    Bring a large pot of salted water to a boil. Gently drop the gnocchi into the boiling water. Cook until they float to the top, about 2-3 minutes. Remove them with a slotted spoon and set aside.
