Prepare the Broth
In a large pot, heat the vegetable broth over medium heat.

Add Mushrooms and Tomato
Chop the shiitake mushrooms and add them to the broth along with the roasted tomatoes. Let simmer for about 10 minutes.

Prepare Tofu
While the broth is simmering, press the tofu to remove excess moisture, then cut into cubes. In a separate pan, heat sesame oil and sauté the tofu until golden brown on all sides.

Cook Ramen Noodles
In a separate pot, cook the ramen noodles according to package instructions, then drain and set aside.

Combine Ingredients
Add the cooked ramen noodles and sautéed tofu to the broth. Stir in shoyu (soy sauce) and mix well.

Garnish and Serve
Ladle the ramen into bowls, garnish with sliced scallions and kimchi if desired. Serve hot.
