Preparation Steps

  1. 1

    Prepare the Broth

In a large pot, heat the vegetable broth over medium heat.

  2. 2

    Add Aromatics

Add minced garlic and ginger into the pot with the broth, stirring continuously for 2-3 minutes until fragrant.

  3. 3

    Add Mushrooms and Tomato

Chop the shiitake mushrooms and add them to the broth along with the roasted tomatoes. Let simmer for about 10 minutes.

  4. 4

    Prepare Tofu

While the broth is simmering, press the tofu to remove excess moisture, then cut into cubes. In a separate pan, heat sesame oil and sauté the tofu until golden brown on all sides.

  5. 5

    Cook Ramen Noodles

In a separate pot, cook the ramen noodles according to package instructions, then drain and set aside.

  6. 6

    Add Bok Choy

After the mushrooms have simmered for 10 minutes, add the bok choy to the broth and cook for an additional 3-4 minutes until wilted.

  7. 7

    Combine Ingredients

Add the cooked ramen noodles and sautéed tofu to the broth. Stir in shoyu (soy sauce) and mix well.

  8. 8

    Garnish and Serve

Ladle the ramen into bowls, garnish with sliced scallions and kimchi if desired. Serve hot.
