    Prepare the Macadamia Ricotta

    In a food processor, combine macadamia nuts, firm tofu, a pinch of salt, and black pepper. Blend until smooth and creamy, scraping down the sides as needed. Set aside.

    Cook the Wild Mushrooms

    In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent. Add the sliced wild mushrooms and cook until they release their moisture and become tender. Season with salt and black pepper to taste. Stir in fresh spinach until wilted. Remove from heat and let cool.

    Make the Bechamel Sauce

    In a saucepan, melt butter over medium heat. Add all-purpose flour and whisk continuously for about 2 minutes to make a roux. Gradually pour in the milk while whisking to prevent lumps. Cook until the sauce thickens, about 5-7 minutes. Stir in grated nutmeg, salt, and black pepper. Remove from heat.

    Assemble the Lasagna

    Preheat the oven to 180°C (350°F). In a large baking dish, spread a thin layer of bechamel sauce at the bottom. Place a layer of lasagna noodles over it, followed by half of the macadamia ricotta, half of the mushroom and spinach mixture, and another layer of bechamel. Repeat the layers, finishing with a layer of noodles topped with the remaining bechamel sauce. Sprinkle grated parmesan cheese on top.

    Bake the Lasagna

    Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes until the top is golden and bubbly. Let it cool for 10 minutes before slicing and serving.
