Cauliflower Preparation

Prepare the Cauliflower
Preheat the oven to 425°F (220°C). Cut the cauliflower into florets of even size.

Season the Cauliflower
In a large bowl, toss the cauliflower florets with olive oil, salt, and black pepper until well-coated.

Roast the Cauliflower
Spread the seasoned cauliflower on a baking sheet in a single layer and roast in the preheated oven for 25-30 minutes, or until golden brown and tender.
Green Curry Sauce

Make the Green Curry Sauce
In a saucepan over medium heat, combine the coconut milk and green curry paste. Stir well and bring to a simmer.

Finish the Sauce
Add lime juice and brown sugar to the saucepan, stirring until the sugar dissolves. Let simmer for an additional 5 minutes.
Rice Preparation

Cook the Rice
In a pot, bring 2 cups of water to a boil. Add the basmati rice, cover, and reduce heat to low. Cook for 15 minutes or until the water is absorbed and the rice is tender.

On a plate, serve a portion of rice, top with roasted cauliflower, drizzle with green curry sauce, and garnish with chermoula, pepitas, raisins, and fresh cilantro.
