    Prepare the Pasta Dough

    In a large mixing bowl, combine the flour and salt. Make a well in the center and crack in the egg. Gradually mix in the flour with a fork until a dough forms. Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

    Cook the Filling

    In a skillet, melt the butter over medium heat. Add the diced shallots and cook until translucent, about 3-4 minutes. Stir in the chopped wild mushrooms and cook until they release their moisture and become tender, about 5-7 minutes. Season with salt and black pepper. Remove from heat and let cool slightly.

    Combine Filling Ingredients

    In a bowl, mix the cooked mushroom and shallot mixture with the chopped walnuts and fresh herbs. Adjust seasoning if necessary. This will be your filling.

    Roll Out the Dough

    After the dough has rested, divide it into four equal pieces. Roll out each piece on a floured surface as thinly as possible, about 1/16 inch thick.

    Form the Ravioli

    Place a teaspoon of the filling about 1 inch apart in a line on one half of the rolled-out dough. Brush the edges of the dough with a little beaten egg. Fold the other half of the dough over the filling and press down to seal. Cut out individual ravioli using a knife or a pastry cutter. Ensure the edges are well sealed.

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Gently drop the ravioli into the boiling water and cook for about 3-4 minutes, or until they float to the surface and are tender.
