Method

Kimchi Preparation

    Prepare the Napa Cabbage

    Cut the Napa cabbage into quarters and remove the core. Chop the cabbage into bite-sized pieces and place them in a large bowl.

    Sprinkle salt over the chopped cabbage and toss to coat. Let it sit for about 1-2 hours, tossing occasionally, until the cabbage is wilted.

    Make the Kimchi Paste

    In a separate bowl, combine gochugaru, minced garlic, grated ginger, fish sauce, and sugar. Mix well until you form a thick paste.

    Combine Kimchi Ingredients

    Rinse the salted cabbage under cold water to remove excess salt. Drain and mix in the kimchi paste and chopped scallions. Mix well to ensure the cabbage is fully coated.

    Ferment the Kimchi

    Transfer the kimchi to a clean jar, pressing it down to remove air pockets. Leave it at room temperature for 1-2 days to ferment, then refrigerate.

Black Rice Cooking

    Rinse the Rice

    Rinse the black rice under cold water until the water runs clear.

    In a pot, combine the rinsed black rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 30-35 minutes until the rice is tender.

    Once cooked, remove from heat and let it sit covered for 10 minutes. Fluff with a fork before serving.

Wasabi Avocado Emulsion Preparation

    Add wasabi paste, lemon juice, and salt to the blender. Blend until smooth and creamy.

    In a small bowl, mix together mayonnaise, Sriracha sauce, and lime juice until well combined. Adjust seasoning to taste.

Plating

    On a plate, spread a layer of black rice as the base.
