    Prepare the Sweet Potatoes

    Wash the Japanese sweet potatoes thoroughly, then peel and cut them into small cubes. Steam the cubes until they're tender, about 15-20 minutes. Allow to cool slightly, then mash them until smooth.

    Cook the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rice with 1 1/4 cups of water in a rice cooker or a pot. Cook according to the rice cooker's instructions or bring to a boil, cover, and simmer for about 20 minutes. Remove from heat and let it sit covered for another 10 minutes.

    Season the Rice

    In a small bowl, mix together the rice vinegar, sugar, and salt. Once the rice is done, gently fold this mixture into the rice using a wooden spoon or rice paddle. Allow the rice to cool to room temperature.

    Prepare the Nori Sheets

    Lay a bamboo sushi mat on a flat surface and place a sheet of nori on top, shiny side down.

    Assemble the Roll

    Wet your hands with water to prevent sticking. Take about 1/2 cup of sushi rice and spread it evenly over the nori, leaving about an inch at the top edge. Add a line of the mashed sweet potato along the center, followed by a few slices of fresh jalapeño and a sprinkle of crispy rice.

    Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to keep it tight. Seal the edge with a little water.

    Using a sharp knife, slice the roll into bite-sized pieces. Wipe the knife with a damp cloth between cuts to ensure clean slices.

    Prepare Wasabi Mayo (optional)

    Mix wasabi paste with mayonnaise in a small bowl, adjusting the wasabi to your taste.
