    Prepare the Beets

    Begin by washing the fresh beets thoroughly under running water to remove any dirt. Trim the tops and roots off the beets.

    Roast the Beets

    Wrap the whole beets in aluminum foil and roast them in a preheated oven at 400°F (200°C) for about 45-60 minutes, or until they are tender when pierced with a fork. Allow them to cool slightly after roasting.

    Slice the Beets

    Once cooled, peel the skins off the roasted beets using your hands or a paper towel. Slice the beets into thin rounds using a sharp knife or a mandoline for even slices.

    Prepare the Dressing

    In a small bowl, whisk together the olive oil, balsamic vinegar, wasabi paste, salt, and black pepper until well combined.

    Assemble the Carpaccio

    On a large serving platter, arrange the beet slices in a circular pattern. Drizzle the prepared dressing over the beet slices.
