Method
Prepare the Calamari
- 1
Clean and Slice the Calamari
Ensure the calamari is cleaned properly. Slice the calamari into rings about 1/2 inch thick.
- 2
Marinate in Buttermilk
Place the sliced calamari in a bowl and cover with buttermilk. Let it marinate in the refrigerator for at least 30 minutes.
Prepare the Coating
- 3
Mix Dry Ingredients
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well.
Fry the Calamari
- 4
Heat the Oil
In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
- 5
Coat the Calamari
Remove the calamari from the buttermilk, allowing excess to drip off. Dredge the calamari rings in the flour mixture, ensuring they are well coated.
- 6
Fry the Calamari
Fry the calamari in batches, being careful not to overcrowd the pot. Fry for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.
Prepare the Dipping Sauce
- 7
Mix the Sauce
In a small bowl, combine mayonnaise, ketchup, lemon juice, and hot sauce (if using). Mix well until smooth.
