Ice Cream & Assembly Prep

    Soften and portion ice cream

    Remove the ice cream from the freezer about 8–10 minutes before assembling so it softens slightly but is still cold. Line a baking sheet with parchment and place a silicone half-sphere scoop or 2-inch cookie cutter nearby for portioning.

    Portion ice cream

    Scoop or press approximately 1/4 cup (about 2 ounces) of softened ice cream into small rounds to match the size of your pizzelle or cookie. Place the portions on the prepared baking sheet and return to the freezer to firm up for at least 30 minutes.

    Prepare jam layer

    Warm the seasonal jam slightly in a small saucepan over low heat or in a microwave for 10–15 seconds so it becomes spreadable but not hot. If chunky, mash slightly with a fork. Let cool briefly while ice cream firms.

Cookies / Shells

    If using homemade pizzelles or bacon-fat cookies, bake and cool completely before use. For bacon cookies, ensure they are crisp and drained of excess grease. Arrange cookies on a clean surface, flat side up, ready for assembly.

    If any puckered or irregular cookies are larger than your ice cream rounds, trim to match or use slightly larger ice cream portions so sandwich edges align neatly.

Assemble Sandwiches

    Take one cookie/pizzelle (flat side up). Spoon about 1 teaspoon of the warmed seasonal jam onto the center and spread into a thin layer, leaving a 1/4-inch border.

    Place a frozen ice cream round on top of the jam-topped cookie. Sprinkle a pinch (about 1/2 teaspoon) of the chopped toasted pecans onto the exposed ice cream edge if you want nuts inside the sandwich.

    Top with a second cookie, pressing gently just until the ice cream spreads to the edge but does not squish out excessively. Return assembled sandwiches to the freezer on a lined tray for at least 20–30 minutes to re-harden.

Chocolate Shell

    Melt the chocolate: place chopped chocolate (or wafers) in a heatproof bowl over a saucepan of barely simmering water (double boiler), stirring until smooth. Alternatively microwave in 20-second bursts at 50% power, stirring between bursts. Stir in up to 2 tsp neutral oil if needed to reach a dip-friendly consistency.

    Remove sandwiches from the freezer. Using two forks or a dipping tool, dip the top half or the entire edge of each sandwich into the melted chocolate so it forms a shell. Allow excess chocolate to drip back into the bowl and set the dipped sandwich on parchment. Work in batches so chocolate stays fluid.

    While chocolate is still wet, immediately press the chocolate-dipped edge into the extra toasted chopped pecans so they adhere. Return dipped sandwiches to the freezer for 10 minutes to set the chocolate fully.

Finishing & Torch Marshmallow

    Dust each sandwich lightly with powdered sugar just before serving using a small sieve or shaker.

    Skewer a large marshmallow on a metal skewer or long fork. Toast the marshmallow over a kitchen torch or open flame until golden-brown and slightly charred to your preference (rotate for even toasting).

    Immediately press the toasted marshmallow onto the top of each chocolate-dipped sandwich, or serve it on the side perched atop the sandwich for presentation. If pressing, do so gently to avoid cracking the chocolate shell.

    Serve immediately. If not serving right away, keep sandwiches in the freezer and toast marshmallows at service to maintain the torched texture.
