House-made Lemonade
Method
Tea
- 1
Steep the tea
Bring 960 ml (4 cups) of water to the appropriate temperature for the TEATOPIA® Tea of the Day (usually 95–100°C / 203–212°F for black tea, 85–90°C / 185–194°F for oolong, 75–80°C / 167–176°F for green). If using loose leaf, measure 1 tablespoon (about 2.5–3 g) per 240 ml cup — total ~4 tablespoons for 4 cups. Place tea in an infuser or pot and pour hot water over it.
- 2
Steeping time
Steep for the tea’s recommended time (black 3–5 minutes, oolong 3–4 minutes, green 1.5–3 minutes). Avoid oversteeping to prevent bitterness. After steeping, remove tea leaves or bags.
- 3
Cool the brewed tea briefly at room temperature for 10–15 minutes, then transfer to the refrigerator for 20–30 minutes or pour over ice to chill more quickly. The final chilled tea volume should be about 4 cups before combining with lemonade and ice.
House-made Lemonade
- 4
Make simple syrup
Combine 240 ml water and 200 g granulated sugar in a small saucepan over medium heat. Stir until the sugar fully dissolves and the mixture comes to a gentle simmer. Once clear and syrupy (about 3–4 minutes), remove from heat and let cool to room temperature.
- 5
Mix lemonade
In a pitcher, combine 240 ml fresh lemon juice with the cooled simple syrup. Add 480 ml cold water and stir well. Taste and adjust sweetness or acidity by adding more water (for milder) or more lemon juice (for brighter). The finished lemonade yields about 1 liter.
Assemble PETE’S PALMER
- 6
In a large pitcher or per-serving glass, combine equal parts chilled TEATOPIA® Tea of the Day and house-made lemonade. For a single serving (about 16 oz / 475 ml), use 240 ml chilled tea + 240 ml lemonade. For the recipe quantities above (4 cups tea and ~4 cups lemonade), you’ll make 8 cups total—enough for four 12–16 oz servings or so.

Optional: Adjust sweetness to taste by stirring in additional simple syrup or sugar, or add a sprig of fresh mint for aroma.
