Pineapple-Honey-Habanero Syrup (makes ~1 cup)
Method
Pineapple-Honey-Habanero Syrup

Combine pineapple chunks, honey, and water in a small saucepan over medium heat.

Bring to a gentle simmer, stirring occasionally, and cook 6–8 minutes until pineapple softens and honey dissolves.

Remove from heat. Add habanero half (with seeds for higher heat, without for milder) and lime juice to the warm mixture.

Let steep 15–20 minutes off the heat, tasting after 10 minutes to check spiciness. Leave habanero in longer for more heat.

Strain mixture through a fine-mesh sieve, pressing on solids to extract flavor. Discard solids and habanero. Cool syrup to room temperature, then refrigerate. Yields about 1 cup.

Prepare glass
Run a lime wedge around the rim of a rocks or coupe glass. Dip the rim into a small plate with Tajin to coat evenly. Set glass aside.

Fill a cocktail shaker with ice (about 1 cup).

Add 2 oz El Milagro Reposado, 1 oz Cointreau, 0.75 oz pineapple-honey-habanero syrup, 0.25 oz agave nectar, 1 oz fresh pineapple juice, and 0.75 oz fresh lime juice to the shaker.

Cap and shake vigorously for 12–15 seconds until the shaker is very cold and well-diluted.

Double-strain (if available) into the prepared Tajin-rimmed glass over either a large ice cube (rocks glass) or without ice (coupe) according to preference.

Garnish with a pineapple wedge on the rim and a lime wedge. Optionally add a small cilantro sprig or microgreens for aroma.

Serve immediately. Taste and adjust heat next batch by adding or removing habanero seeds in the syrup, or altering syrup quantity to balance sweetness and spice.
