Preheat and prepare
Preheat your oven to 500°F (260°C). If you have a pizza stone, place it in the oven while preheating. Lightly dust a pizza peel or work surface with the all-purpose flour.

On the floured surface, gently stretch or roll the prepared pizza dough into a 12–14 inch round, leaving a slightly thicker rim for the crust. Transfer the stretched dough to the floured pizza peel or an overturned baking sheet if you don't have a peel.

In a small bowl, combine the tomato sauce, minced garlic, 1 tsp dried oregano, 1/4 tsp salt, and 1/8 tsp black pepper. Stir until evenly mixed.

Spread the sauce evenly over the stretched dough, leaving the oiled 1/2 inch rim exposed. Aim for a thin, even layer (about 3/4 cup total).

Prepare the mushrooms and sausage
Heat 1 tbs olive oil in a skillet over medium-high heat. Add the sliced Ozark forest mushrooms in a single layer and let them sear without moving for 2 minutes to develop color. Stir and continue to cook until tender and golden, about 3–4 more minutes. Season with 1/4 tsp salt and 1/8 tsp black pepper. Remove mushrooms to a plate. If the pan is dry, add the remaining 1 tbs olive oil, then add the vegan sausage slices or crumbles and cook until browned and heated through, about 3–4 minutes. If the vegan sausage is pre-cooked, simply brown to develop texture.

Distribute the cooked mushrooms and vegan sausage evenly over the sauced pizza.

Scatter the shredded smoked mozzarella evenly over the pizza, then tuck the fresh mozzarella pieces or slices across the pie so you get pockets of creamy fresh cheese.

If using, sprinkle 1/4 tsp red pepper flakes over the top for a touch of heat.

Bake
Slide the assembled pizza onto the preheated pizza stone or place the baking sheet in the oven. Bake at 500°F (260°C) until the crust is golden and blistered and the cheeses are melted and bubbling, 8–12 minutes (oven variability applies). Rotate the pizza halfway through baking for even color.

Remove the pizza from the oven. Immediately scatter the fresh oregano leaves (or sprinkle 1 tsp dried oregano) over the hot pizza. Let rest 2–3 minutes to set.
