Method

House Blackberry Syrup

    Cook and strain

    Combine 8 oz blackberries, 1 cup sugar, and 1 cup water in a small saucepan over medium heat. Bring to a simmer, stirring to dissolve sugar, and simmer gently for 6–8 minutes until berries break down and mixture is fragrant and slightly thickened.

    Mash and strain

    Remove from heat. Use a fork or potato masher to press the berries against the side of the pan to extract juices. Pour mixture through a fine mesh sieve into a bowl, pressing solids to extract as much liquid as possible. Discard seeds and solids.

    Finish syrup

    Stir in 1 tablespoon fresh lime juice into the strained syrup. Let cool to room temperature, then refrigerate. Syrup will keep in the fridge for up to 2 weeks. Yield: ~10 oz (use 1 oz per cocktail).

Cocktail Prep

    Prepare the glass

    Rub a lime wedge around the rim of a chilled margarita or coupe glass. Dip the rim into coarse salt or Tajín to coat evenly. Set the glass aside in the freezer for a few minutes if you like it extra cold.

    Blend

    In a blender, combine 2 oz Espolòn Blanco tequila, 1 oz orange liqueur, 1 oz fresh lime juice, 1 oz house blackberry syrup, 3 oz frozen blackberries, and 2 cups ice. Secure lid and pulse once to break ice, then blend on high for 10–20 seconds until smooth and slushy. If mixture is too thick, add 1–2 tablespoons cold water and pulse; if too thin, add a small handful more ice and re-blend.

    Taste and adjust

    Taste the frozen mixture. If it needs more acidity, add 1/4 oz (about 1/2 tablespoon) fresh lime juice and pulse. If it needs more sweetness, add 1/4 oz (about 1/2 tablespoon) blackberry syrup and pulse. Adjust only in small increments.

    Serve

    Spoon or pour the frozen blackberry margarita into the prepared rimmed glass. Garnish with a lime wheel on the rim and 1–2 fresh blackberries skewered or floated on top. Serve immediately with a straw or short spoon.
