Cocktail

  1. 1

    Prepare the glass

Chill a coupe or Nick & Nora glass by filling it with ice and cold water, or place it in the freezer for a few minutes.

  2. 2

    Rinse with absinthe

Discard the ice/water from the chilled glass. Pour 0.25 teaspoon (a light rinse) of absinthe into the glass, tilt and swirl to coat the interior, then pour out or discard any excess. The glass should hold only a thin aromatic film of absinthe.

  3. 3

    Mix the cocktail

In a mixing glass or shaker filled with ice (about 1 cup), combine 1 oz St. George Botanivore Gin, 1 oz Cointreau (or Narano), 1 oz Lo‑Fi Aperitifs Vermouth (or dry vermouth), and 1 oz fresh lemon juice. Stir briskly for 15–25 seconds until well chilled and slightly diluted. If you prefer a slightly brighter texture, shake vigorously for 10–12 seconds instead (traditional Corpse Reviver #2 is shaken).

  4. 4

    Strain and serve

Double‑strain the mixture into the absinthe‑rinsed chilled coupe using a Hawthorne and fine mesh strainer (or a single fine strainer) to remove small ice shards and any pulp. Aim for a clean, clear presentation with a cold temperature.

Garnish

  1. 5

Express the oils of a fresh lemon twist over the surface of the cocktail by holding the twist over the glass, skin side down, and giving it a quick pinch. Run the twist around the rim and drop it into the drink (or discard, per preference). Serve immediately.
