Classic Cola Syrup (makes ~1.25 L syrup)

Make spice infusion
In a small saucepan combine 1 cup filtered water, lime zest, orange zest, ground cinnamon, ground nutmeg and ground coriander. Bring just to a simmer over medium heat, then reduce heat to low and simmer gently for 5 minutes to release essential oils. Remove from heat and let steep, covered, for 15 minutes. Strain into a bowl, discard solids, and reserve the infused liquid.

Make sugar syrup
In a medium saucepan combine 4 cups water, granulated sugar, light brown sugar and caramel or extra dark brown sugar. Heat over medium heat, stirring frequently until sugar dissolves and mixture comes to a gentle simmer. Do not boil vigorously. Once sugar is dissolved, reduce heat to low.

Combine and finish syrup
Add the strained spice infusion to the sugar syrup along with the reserved infused liquid (if any), vanilla extract, citric acid and kola nut extract or cola essence (if using). Stir gently and simmer on low for 3–5 minutes to marry flavors. Taste and adjust: add up to 0.5 tsp more citric acid for brightness or 0.5–1 tsp more vanilla for roundness. Remove from heat and cool to room temperature. Strain through a fine mesh sieve or cheesecloth into a sterilized container. Refrigerate; syrup will keep 2–3 weeks refrigerated.
Ginger Ale Syrup (makes ~750 ml)

Prepare ginger
Place grated ginger and 2 cups water in a small saucepan. Bring to a simmer, then lower heat and simmer for 10 minutes to extract ginger flavor. Remove from heat and let steep for 10 more minutes.

Make ginger syrup
Strain the ginger liquid through a fine mesh sieve, pressing solids to extract as much liquid as possible. Return strained liquid to the saucepan, add granulated sugar and ground cardamom (if using). Heat gently, stirring until sugar fully dissolves. Simmer 2–3 minutes, then remove from heat. Stir in lemon juice and citric acid. Cool to room temperature and transfer to a sterilized bottle. Refrigerate; keeps 2–3 weeks.
Sparkling Base & Bottling

Chill bottles and water
Ensure carbonated water and empty sterilized bottles are well chilled. Cold liquid retains more carbonation and reduces foaming during bottling.

Dilute syrup for bottling
For bottled sodas use a syrup-to-sparkling-water ratio of 1:4 by volume as a starting point (adjust to taste). For a 500 ml bottle: add 100 ml (about 3.5 fl oz) of syrup and top with 400 ml chilled sparkling water. Using measuring jugs, pour the syrup into each bottle first, then slowly add sparkling water down the side to minimize foaming. If making ginger ale, use 1:5 for a lighter ginger presence (100 ml syrup to 500 ml water -> adjust proportionally).

Cap and settle
Cap bottles immediately and gently invert 2–3 times to mix. Place bottles upright in the refrigerator for at least 2 hours before serving to allow CO2 to equilibrate and flavors to meld. Avoid leaving at warm room temperature for prolonged periods as trapped fermentation is not intended; these are handcrafted sodas, not fermented.

Add a slice of citrus or a sprig of mint to each bottle or to the glass when serving. For a richer cocktail-style soda, drop one maraschino or Luxardo cherry into the bottle before sealing.
