Preparation of Croutons

Make the roasted garlic croutons
Preheat the oven to 375°F (190°C). Cut the stale bread into cubes and place them in a mixing bowl. Mince the garlic and add it to the bowl along with olive oil, salt, and pepper. Toss until the bread is well coated. Spread the bread cubes on a baking sheet and bake for 15-20 minutes, or until golden and crispy.

Char the romaine
Cut the romaine lettuce heads in half lengthwise. Preheat a grill or grill pan over medium-high heat. Brush the cut sides of the romaine with olive oil and grill for about 2-3 minutes on each side, until charred but still crisp. Remove from the grill.

Assemble the salad
On a serving platter, place the grilled romaine halves cut side up. Drizzle with sardella and sprinkle with grated Parmigiano-Reggiano. Top with the roasted garlic croutons. Serve immediately.
