Pancake Preparation

    Mix Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and sugar. Whisk until well mixed.

    Mix Wet Ingredients

    In another bowl, whisk together the milk, ube puree, egg, vanilla extract, and melted butter until smooth.

    Combine Mixtures

    Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.

    Preheat Pan

    Heat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or butter.

    Cook Pancakes

    Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook until golden brown on the other side, about 1-2 minutes more.

Topping Assembly

    Whip Coconut Cream

    In a chilled bowl, whip the coconut cream until soft peaks form. This can be done using an electric mixer or by hand.

    Prepare Toppings

    Dice the mango and set aside. Wash and prepare the mixed berries as desired.

    Stack the pancakes on a plate, add a generous dollop of whipped coconut cream, and top with diced mango, mixed berries, and toasted coconut flakes.
