Steak Preparation

    Season the Steak

    Generously season both sides of the ribeye steaks with salt and black pepper. Let them sit at room temperature for about 30 minutes.

    Heat the Pan

    In a large skillet, heat the olive oil over medium-high heat until shimmering.

    Sear the Steak

    Add the steaks to the hot skillet and sear for about 4-5 minutes on each side for medium-rare. Adjust the time for your preferred doneness.

    Add Flavor

    In the last 2 minutes of cooking, add the butter, garlic, and thyme to the pan. Spoon the melted butter over the steaks continuously.

    Rest the Steak

    Remove the steaks from the skillet and let them rest on a cutting board for at least 5 minutes before slicing.

Frites Preparation

    Prepare the Potatoes

    Peel the russet potatoes and cut them into 1/4-inch thick strips. Rinse them in cold water to remove excess starch and pat dry with a clean towel.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 325°F (160°C).

    First Frying

    Carefully add the potato strips in batches and fry for about 5 minutes until soft but not browned. Remove and drain on paper towels.

    Increase Oil Temperature

    Increase the oil temperature to 375°F (190°C).

    Second Frying

    Return the potatoes to the hot oil in batches and fry until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.

    Season the Frites

    Immediately sprinkle the hot frites with salt to taste.
