    Sear the Shrimp

    In a skillet over medium heat, melt 1 tablespoon of butter. Add the head-on shrimp and sear for about 3-4 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

    Add Garlic and Scallions

    In the same skillet, add the minced garlic and chopped scallions to the remaining butter. Sauté for about 1-2 minutes until fragrant, then remove from heat.

    Prepare the Eggs

    In a bowl, crack the eggs and whisk them together with salt and black pepper until well combined.

    Cook the Omelet

    In a non-stick skillet over medium-low heat, pour the egg mixture and let it cook undisturbed for about 2-3 minutes or until the edges start to set.

    Add Filling

    Once the edges are set, add the sautéed garlic and scallions, followed by the seared shrimp on one half of the omelet. Sprinkle the cotija cheese and cilantro over the shrimp.

    Fold and Serve

    Carefully fold the omelet in half over the filling and let it cook for another minute. Slide the omelet onto a plate and serve immediately, garnished with extra cilantro if desired.
