To Make the Prawn Crackers

Mix Ingredients
In a mixing bowl, combine the prawn paste, tapioca flour, salt, and white pepper. Mix well until fully combined.

Create Batter
Gradually add water to the mixture, stirring continuously until you achieve a smooth and thick batter.

Prepare for Piping
Transfer the batter to a piping bag or a plastic bag with the corner snipped off.

Shape Crackers
Line a baking tray with parchment paper and pipe the batter into thin rectangular shapes on the tray.

Steam the Crackers
Steam the piped batter for about 30 minutes until fully cooked. Allow to cool.

Slice Crackers
Once cooled, slice the steamed batter into thin strips.

Fry Crackers
Heat vegetable oil in a deep frying pan over medium heat. Fry the sliced crackers in batches until they puff up and turn golden brown.

Drain Oil
Remove the crackers and place them on paper towels to drain excess oil.
To Make the Sweet Chili Dip

Combine Ingredients
In a saucepan, combine sugar, water, rice vinegar, red chili flakes, and minced garlic. Stir well and bring to a boil.

Simmer Sauce
Reduce heat and let simmer for about 5 minutes until slightly thickened.

Thicken Sauce
Mix cornstarch with 1 tsp of water to create a slurry. Stir this into the sauce to thicken further.

Cool Dip
Once the sauce has thickened to your liking, remove from heat and let cool.
