Burger Preparation

Prepare the Pork Belly
In a pot, cover the pork belly with water, bring to a boil, then reduce the heat and simmer for 2 hours until tender. Let it cool and slice into thick pieces.

Roast the Tomatoes
Preheat the oven to 400°F (200°C). Slice the tomatoes in half, drizzle with olive oil, season with salt and pepper, and roast in the oven for 15-20 minutes until tender.

Garlic Aioli Preparation

Make the Aioli
In a bowl, combine mayonnaise, minced garlic, and lemon juice. Mix well and set aside.

Fry the Potatoes
Fry the potatoes in batches until golden and crispy, about 5-7 minutes. Remove and drain on paper towels, then sprinkle with salt.
Assembling the Burger

Build the Burger
On the bottom half of a toasted brioche bun, spread a generous amount of garlic aioli. Add the cooked beef patty, followed by a slice of roasted pork belly, a fried egg, a handful of arugula, and a roasted tomato half. Top with the other half of the bun and serve immediately with fresh-cut fries.
