Pork Belly

Method

Preparation

  1. 1

    Prepare the Pork Belly

Start by scoring the skin of the pork belly in a crisscross pattern. This will help the fat render and the skin to crisp up.

  2. 2

    Season the Pork Belly

In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, and paprika. Rub this mixture all over the pork belly, ensuring it gets into the scored areas.

  3. 3

    Marinate

Cover the seasoned pork belly with plastic wrap and let it marinate in the refrigerator for at least 4 hours, or overnight for best results.

Cooking

  1. 4

    Preheat the Oven

Preheat your oven to 300°F (150°C).

  2. 5

    Prepare the Baking Dish

In a large baking dish, drizzle the olive oil and place the marinated pork belly skin-side up. Pour the apple cider vinegar around the pork belly.

  3. 6

    Add Rosemary

Place the fresh rosemary sprigs on top of the pork belly for additional flavor.

  4. 7

    Roast the Pork Belly

Cover the baking dish with aluminum foil and roast in the preheated oven for 2 to 2.5 hours, or until the pork is tender.

  5. 8

    Crisp the Skin

After the pork belly is tender, remove the foil and increase the oven temperature to 425°F (220°C). Roast for an additional 20-30 minutes or until the skin is crispy and golden brown.

  6. 9

    Rest and Serve

Once done, remove the pork belly from the oven and let it rest for about 10 minutes before slicing. Serve warm and enjoy!
