Preparing the Fries

    Cutting the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips to create fries.

    Frying the Fries

    Heat the vegetable oil in a deep fryer or heavy pot to 350°F (175°C). Add the cut potatoes in batches and fry them for about 5-7 minutes or until they are golden brown and crispy. Remove with a slotted spoon and drain on paper towels. Sprinkle with salt while hot.

Preparing the Toppings

    Cooking the Bacon

    In a skillet over medium heat, cook the bacon slices until they are crispy. Remove from the skillet and place on paper towels to drain excess grease. Once cooled, chop into small pieces.

    Chopping the Vegetables

    Slice the scallions thinly, separating the green and white parts. Slice the jalapeños into rings, removing seeds if desired for less heat.

    Cooking the Eggs

    In the same skillet used for the bacon, crack the eggs and cook sunny side up until the whites are set, about 2-3 minutes.

Assembling the Loaded Fries

    Layering the Ingredients

    On a large serving platter, layer the hot fries. Sprinkle the chopped bacon evenly over the fries, followed by the sliced scallions, jalapeños, and both types of cheese (Cheddar and Pepper Jack).

    Melting the Cheese

    Place the assembled fries under a broiler for 2-3 minutes until the cheese is melted and bubbly. Keep a close eye to prevent burning.

    Topping with Eggs

    Remove the fries from the broiler and top each serving with a sunny side up egg.
