Prepare the Cucumber
Grate the cucumber and place it in a clean dish towel or cheesecloth. Squeeze out excess moisture.

Refrigerate
Cover the tzatziki sauce and refrigerate for at least 30 minutes to allow the flavors to meld.

Toast the Buns
Preheat the oven to 350°F (175°C). Place brioche buns on a baking sheet and toast them in the oven for about 5-7 minutes until golden brown.

Assemble the Sandwich
Spread a generous amount of tzatziki sauce on the bottom half of each toasted bun. Layer with shredded lamb, sliced tomato, chopped parsley, crispy shallots, and pepperoncini.

Top and Serve
Place the top half of the bun over the filling. Serve the sandwiches warm with fresh cut fries on the side.

Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into even strips to form fries.

Heat the Oil
In a large, heavy pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes
Carefully add the cut potatoes to the hot oil in batches, frying until golden and crisp, about 5-7 minutes per batch. Remove and drain on paper towels.

Sprinkle the fries with salt while they are still hot. Serve alongside the lamb sandwiches.
