Pancake Preparation

    Mix Dry Ingredients

    In a large mixing bowl, whisk together the all-purpose flour, baking powder, sugar, and salt until well combined.

    Combine Wet Ingredients

    In a separate bowl, mix the ube halaya, milk, egg, vanilla extract, and melted butter until smooth.

    Combine Wet and Dry Ingredients

    Pour the wet ingredients into the dry ingredients and gently fold them together until just combined. Be careful not to overmix; some lumps are okay.

    Preheat the Pan

    Heat a non-stick skillet or frying pan over medium heat and lightly grease it with butter or cooking spray.

    Cook the Pancakes

    Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes or until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.

    Continue cooking the remaining batter, adding more butter to the skillet as needed.
