Preparation

    Fry the Tortillas

    In a skillet over medium heat, add a small amount of oil and fry each corn tortilla for about 1-2 minutes on each side until they are golden brown and slightly crispy. Remove and place on a paper towel to drain excess oil.

    Heat the Refried Beans

    In a small saucepan, heat the refried black beans over medium heat until warmed through, stirring occasionally. This should take about 5 minutes.

    Fry the Eggs

    In the same skillet used for the tortillas, crack two eggs and cook sunny side up for about 2-3 minutes, or until the whites are set but the yolks are still runny.

Assembly

    Assemble the Huevos Rancheros

    On each fried corn tortilla, spread a generous layer of the warmed refried black beans. Top each with a sunny side up egg.

    Add Toppings

    Sprinkle fresh cilantro and cotija cheese over the eggs. Drizzle salsa verde and spicy smoked red pepper sauce on top.
