Preparing Duck Breast

Score the Duck Breasts
Using a sharp knife, lightly score the skin of the duck breasts in a crosshatch pattern, being careful not to cut into the meat.

Season the Duck
Rub salt and black pepper all over the duck breasts, ensuring it gets into the scored skin.

Finish Cooking
Flip the duck breasts and reduce heat to medium-low. Cook for an additional 4-6 minutes for medium-rare. Remove from heat and let rest for 5 minutes before slicing.

Prepare the Vegetables
Wash and trim the asparagus, peel and slice the carrots, and cut the zucchini into half-moons.

Making the Rich Sauce

Sauté Shallots
In a saucepan over medium heat, melt 1 tablespoon of butter and sauté the minced shallots until translucent, about 2-3 minutes.

Add Wine and Stock
Pour in the red wine and duck stock. Bring to a boil, then reduce to a simmer. Cook until reduced by half, about 10-15 minutes.

Whisk in the remaining tablespoon of butter and fresh thyme. Season with salt and pepper to taste.
