    Wash the russet potatoes thoroughly under cold running water. Peel the potatoes if desired, then cut them into sticks, about 1/4 to 1/2 inch thick.

    Place the cut potato sticks in a large bowl of cold water and soak for at least 30 minutes to remove excess starch. This helps achieve a crispier fry.

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.
