Prepare the Pork Belly
Preheat your oven to 220°C (425°F). Score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat. This allows the fat to render out and helps the skin become crispy.

Season the Pork
Rub the pork belly with olive oil, then generously season with salt, black pepper, garlic powder, and paprika. Ensure you rub the seasoning into the scored skin.

Roasting the Pork
Place the pork belly on a rack in a roasting tray and roast in the preheated oven for about 30 minutes, or until the skin starts to puff up and crisp. Reduce the oven temperature to 160°C (320°F) and continue to roast for another 1 to 1.5 hours, or until the meat is tender.

Final Crisping
For an extra crispy skin, increase the oven temperature back to 220°C (425°F) for the last 15-20 minutes of cooking.

Simmer the Sauce
Cook over medium heat, stirring occasionally, for about 15-20 minutes until the apples are soft and break down into a sauce. You can mash them with a fork for a smoother consistency if desired.

Cool and Serve
Remove from heat and let the apple sauce cool. Serve it alongside the crispy pork belly.

Prepare the Potatoes
While the pork belly is roasting, prepare the potatoes. Preheat the oven to 200°C (400°F) if not already on. Cut potatoes into wedges.

Roast the Potatoes
Spread the potatoes on a baking sheet in a single layer and roast in the oven for about 30-35 minutes, turning halfway through, until golden brown and crispy.
