Calamari Preparation

Soak the Calamari
In a bowl, soak the calamari rings in buttermilk for at least 30 minutes. This helps to tenderize the calamari.

Prepare the Breading
In a separate bowl, mix the flour, cornstarch, salt, black pepper, paprika, and garlic powder. This will be your breading mixture.

Heat the Oil
In a deep pot or fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Bread the Calamari
Remove the calamari from the buttermilk, allowing excess to drip off. Dredge each ring in the breading mixture until fully coated.

Fry the Calamari
Fry the breaded calamari in batches for about 2-3 minutes or until golden brown. Avoid overcrowding the pot. Remove with a slotted spoon and drain on paper towels.

Combine Ingredients
Add the canned crushed tomatoes, oregano, basil, salt, black pepper, and sugar. Stir to combine.

Bring the sauce to a simmer and let it cook for about 15-20 minutes, stirring occasionally.
