Cake Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 220°C (425°F). Grease four ramekins with butter and dust with flour to prevent sticking.

  2. 2

    Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a double boiler or in the microwave in 30-second intervals until smooth. Stir well to combine.

  3. 3

    Mix Sugar and Eggs

In a separate bowl, whisk together the granulated sugar, large eggs, and large egg yolk until the mixture is pale and slightly thickened.

  4. 4

    Combine Mixtures

Pour the melted chocolate mixture into the egg mixture, adding the vanilla extract and a pinch of salt. Stir until fully incorporated.

  5. 5

    Add Flour

Sift in the all-purpose flour and gently fold it into the batter until just combined, being careful not to overmix.

  6. 6

    Fill Ramekins

Evenly divide the batter among the prepared ramekins, filling each about 3/4 full.

Baking

  1. 7

    Bake the Cakes

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

  2. 8

    Cool Slightly

Remove the ramekins from the oven and let them cool for about 1 minute. Run a knife around the edges to loosen the cakes.

  3. 9

    Invert and Serve

Carefully invert the ramekins onto individual plates. Tap gently to release the cakes. Serve immediately with a scoop of vanilla ice cream on top and dust with powdered sugar.
