Preparing the Chocolate Fondant

Melt the Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let cool slightly.

Mix the Sugar and Eggs
In another mixing bowl, whisk together the granulated sugar, large eggs, and egg yolk until pale and slightly thickened, about 2-3 minutes.

Combine Mixtures
Slowly pour the melted chocolate mixture into the egg mixture while whisking continuously to combine. Add the vanilla extract and a pinch of salt.

Add Flour
Sift the all-purpose flour into the mixture and gently fold it in until just combined. Be careful not to overmix.

Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling them about ¾ full.

Bake
Place the ramekins in the preheated oven and bake for 10-12 minutes, or until the edges are set but the center remains soft.

Cool and Serve
Remove from oven and let cool for 1-2 minutes. Carefully invert each ramekin onto a plate. Serve warm with scoops of vanilla ice cream and garnish with fresh berries if desired.
