Preparation and Cooking

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, baking powder, sugar, and salt until well combined.

  2. 2

    Combine Wet Ingredients

In another bowl, combine the buttermilk, egg, melted butter, and vanilla extract. Whisk until smooth.

  3. 3

    Combine Wet and Dry Ingredients

Pour the wet mixture into the dry ingredients. Stir gently with a spatula until just combined. Be careful not to overmix; a few lumps are okay.

  4. 4

    Preheat the Pan

Heat a non-stick skillet or griddle over medium heat. You can lightly grease it with a bit of butter if desired.

  5. 5

    Cook the Pancakes

Pour 1/4 cup of batter onto the preheated skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.

  6. 6

    Serve

Serve warm pancakes topped with whipped cream, seasonal berries, and maple syrup.
