Burrito Filling

    Cook the Bacon

    In a large skillet over medium heat, cook the slices of pork bacon until crispy, about 5-7 minutes. Remove from the skillet and let drain on paper towels.

    Scramble the Eggs

    In a bowl, whisk together the eggs. In the same skillet, leave about 1 tablespoon of bacon grease and add the whisked eggs. Cook over medium heat, stirring gently until the eggs are fully scrambled and set, about 3-4 minutes.

    Add Cheese and Fries

    Once the eggs are scrambled, add the cheddar pepper jack cheese blend and fries to the skillet. Stir until the cheese has melted and the fries are heated through, about 2 minutes.

    Prepare Avocado and Jalapeños

    While the filling is cooking, slice the avocado in half, remove the pit, and scoop out the flesh. Slice into thin pieces. Slice the jalapeños into rings, removing seeds if desired for less heat.

Pico de Gallo

    Chop Ingredients

    Dice the tomatoes and onion finely. In a bowl, combine the diced tomatoes, onion, and chopped cilantro.

    Season the Pico de Gallo

    Add lime juice and salt to the bowl with tomatoes and onion. Stir to combine and let sit for at least 10 minutes to meld flavors.

Burrito Assembly

    Assemble the Burritos

    Lay a large flour tortilla flat on a plate. Spoon a portion of the egg, cheese, and fry mixture onto the center of the tortilla. Add slices of avocado and jalapeños on top.

    Roll the Burrito

    Fold the sides of the tortilla over the filling, then roll the bottom up to enclose the filling completely. Repeat with remaining tortillas and filling.

    Serve

    Serve the breakfast burritos warm with a side of pico de gallo.
