Preparing the Fries

Preheat the Oven
Preheat your oven to 425°F (220°C).

Prepare the Potatoes
Wash and cut the potatoes into fries. You can peel them if desired.

Bake the Fries
Spread the fries in a single layer on a baking sheet and bake for 25-30 minutes, flipping halfway through, until golden and crispy.
Cooking the Burger

Form the Patties
Divide the beef mixture into two equal portions and shape them into burger patties.

Add Blue Cheese
During the last minute of cooking, top each patty with blue cheese and cover to allow it to melt.
Sautéing the Mushrooms

Assembling the Burger

Add Garlic Aioli and Tomatoes
Spread garlic aioli on the top half of the bun, and add herb roasted tomatoes if desired.

Place the top half of the bun on the assembled burger and serve immediately with the fries.
