Make Peach Puree

Peel and chop the fresh peaches, then blend them in a blender until smooth. If desired, strain the puree through a fine mesh sieve to remove any fibrous bits. Measure out 2 cups of the peach puree and set aside.

Chill Prosecco

Place the Prosecco in the refrigerator for at least 1 hour before serving to ensure it is well chilled.

Combine Ingredients

In a large mixing bowl, combine the peach puree and chilled Prosecco. Stir gently to combine without losing the fizz of the Prosecco.

Taste and Adjust

Taste the mixture and if you prefer a sweeter Bellini, add simple syrup to taste and stir gently to combine.

Serve

Pour the Bellini mixture into chilled glasses, filling them about three-quarters full. Garnish each glass with a slice of fresh peach and a mint leaf if desired.
