Method

Prepare Banana Nut Bread

  1. 1

If you haven't already, bake a loaf of banana nut bread and let it cool completely before slicing.

Make the Egg Batter

  1. 2

    Combine Ingredients

In a large bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined.

Caramelize the Bananas

  1. 3

    Prepare the Bananas

Peel the ripe bananas and slice them in half lengthwise.

  2. 4

    Melt Butter and Add Sugar

In a skillet over medium heat, melt the butter. Once melted, sprinkle the brown sugar over the butter and stir to combine.

  3. 5

    Cook the Bananas

Place the banana halves cut side down into the skillet. Cook for about 2-3 minutes until caramelized and golden brown. Flip and cook for another 1-2 minutes, then remove from heat.

Prepare the French Toast

  1. 6

    Dip the Banana Nut Bread

Heat a non-stick skillet or griddle over medium heat. Dip each slice of banana nut bread into the egg batter, ensuring both sides are coated.

  2. 7

    Cook the French Toast

Place the dipped banana nut bread slices on the skillet and cook for about 2-3 minutes on each side, or until golden brown.

Serve

  1. 8

    Assemble the Dish

Place the cooked French toast on plates, top with caramelized bananas, sprinkle with chopped pecans, and drizzle with maple syrup. Serve warm.
