Preparation of Base
Heat the Milk and Cream
In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is warm but not boiling.
Whisk Egg Yolks and Sugar
In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and slightly thickened.
Cook the Mixture
Return the combined mixture to the saucepan and cook over medium-low heat, stirring constantly until the mixture thickens and coats the back of a spoon (about 5-7 minutes).
Add Vanilla
Remove from heat and stir in the vanilla extract. Let the mixture cool to room temperature, then refrigerate for at least 2 hours.
Flavoring and Churning
Choose Your Flavor
Decide on the flavor of your gelato. You can either add cocoa powder for chocolate gelato, pureed strawberries for strawberry gelato, crushed pistachios for pistachio gelato, or brewed coffee for coffee gelato.
Mix in Flavoring
Once the base mixture is chilled, stir in the chosen flavoring ingredient until well combined.
Churn the Gelato
Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency (about 20-30 minutes).
Freeze the Gelato
Transfer the gelato to an airtight container and freeze for at least 4 hours or until firm.
