Method

Pasta Preparation

  1. 1

    Cook the Spaghetti

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes. Reserve 1 cup of the pasta water, then drain the spaghetti.

Sauce Preparation

  1. 2

    Prepare the Carbonara Sauce

In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined. Set aside.

Cooking Pancetta

  1. 3

    Cook the Pancetta

In a large skillet over medium heat, add the diced pancetta. Cook until crispy and golden, about 5-7 minutes. Remove from heat.

Combining Ingredients

  1. 4

    Combine Spaghetti and Sauce

Add the drained spaghetti to the skillet with the pancetta. Toss to combine. While the pasta is still hot, pour the egg and cheese mixture over the spaghetti. Quickly toss to coat the pasta, adding reserved pasta water as needed to create a creamy sauce.

Serving

  1. 5

    Garnish and Serve

Serve immediately, garnished with chopped parsley and additional Parmesan cheese if desired. Enjoy your homemade Spaghetti Carbonara!
