Cooking the Pasta

In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

In a large skillet over medium heat, melt the butter. Once melted, add the flour and whisk continuously for about 2 minutes until it forms a roux.

Slowly pour in the milk while whisking to avoid lumps. Continue to cook and stir until the mixture thickens, about 5-7 minutes.

Add the cream cheese, blue cheese, mozzarella, and Parmesan cheese to the skillet. Stir until all the cheeses are melted and the sauce is smooth.
