Pasta Preparation

    Cook the Tagliatelle

    Bring a large pot of salted water to a boil. Add the tagliatelle pasta and cook according to package instructions until al dente. Drain and set aside.

Meat Sauce Preparation

    Sauté the Vegetables

    In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion, grated carrot, and diced celery. Sauté for about 5 minutes until softened.

    Brown the Meat

    Add the ground beef to the skillet and cook until browned, breaking it apart with a spatula, about 5-7 minutes.

    Add Garlic and Tomatoes

    Finely chop the garlic and add it to the skillet. Stir in the canned tomatoes, tomato paste, and red wine. Bring to a simmer.

    Season the Sauce

    Add the dried oregano, salt, and black pepper. Reduce the heat and let the sauce simmer gently for about 20-25 minutes, stirring occasionally.

    Finish the Sauce

    Chop the fresh basil and stir it into the sauce just before serving.

Combining

    Combine Pasta and Sauce

    Add the cooked tagliatelle to the meat sauce and toss gently to combine. Serve hot, garnished with additional basil if desired.
