Panna Cotta Preparation

    Bloom the Gelatin

    In a small bowl, combine the gelatin powder with cold water and let it sit for about 5-10 minutes until it becomes gelatinous.

    Heat the Cream Mixture

    In a saucepan, combine heavy cream, whole milk, and granulated sugar. Heat over medium heat, stirring frequently until the mixture is warm and the sugar is dissolved, but do not let it boil.

    Add Gelatin

    Remove the saucepan from heat and add the bloomed gelatin and vanilla extract. Stir well until the gelatin is completely dissolved.

    Pour into Molds

    Pour the mixture into individual serving molds or cups. Cover with plastic wrap and refrigerate for at least 4 hours, or until set.

Berry Sauce Preparation

    Cook the Berries

    In a small saucepan over medium heat, combine mixed berries, granulated sugar, and lemon juice. Cook until the berries start to break down and the sauce thickens, about 5-10 minutes.

    Cool the Sauce

    Remove from heat and let the sauce cool to room temperature. For a smoother sauce, you can blend it and strain it to remove seeds.

    Serve

    Once the panna cotta has set, carefully unmold it onto a plate and drizzle the berry sauce over the top before serving.
