Salsa Verde Dressing
Method
Preparing the Salad

Wash and Chop Greens
Thoroughly wash the romaine lettuce and arugula under running water. Dry them using a salad spinner or pat them dry with a clean kitchen towel. Chop the romaine lettuce into bite-sized pieces and place it in a large salad bowl along with the arugula.

Prepare Tomatoes
Rinse the cherry tomatoes and cut them in half. Add them to the salad bowl with the greens.

Add Cheese
Drain the fresh mozzarella balls and add them to the salad bowl. Crumble the gorgonzola cheese and sprinkle it over the salad.
Making the Salsa Verde Dressing

Blend the Ingredients
In a food processor, combine the fresh parsley, fresh basil, garlic cloves, and capers. Pulse until finely chopped.

Add Oil and Vinegar
With the food processor running, slowly drizzle in the olive oil and red wine vinegar until the mixture is well combined and smooth.

Season the Dressing
Add salt and black pepper to taste. Blend again briefly to combine.
Combining the Salad

Dress the Salad
Pour the salsa verde dressing over the salad mixture in the bowl. Toss gently to ensure all the ingredients are well coated with the dressing.
